This delicious pie is called Kibbeh and it is the national dish of Lebanon! You’ll need the freshest minced beef, good quality bulgur and some beautiful spices. Oh, you are so going to love this dish!

Serves: 8-10 Prep. time: 40′ Cooks in: 60′ Ready in: 1:40′

Ingredients

For the filling
500 g ground beef
1 large onion, finely chopped
2 garlic cloves, finely chopped
1 tsp cumin, powdered
½ tsp cinnamon, powdered
1 tsp hot paprika
3 tbsp pine nuts, toasted
2 tbsp sultanas
2 tbsp parsley, finely chopped
extra-virgin olive oil
salt, black pepper

For the bulgur
1 kg ground beef (cut 5 times in the meat grinder)
2 cups bulgur, soaked in water
1 onion, quartered

For serving
400 g Greek yogurt
sumac
2 tbsp parsley, finely chopped
3 tbsp extra-virgin olive oil
salt, black pepper

Method

Step 1
For serving: Mix all ingredients in a bowl and keep in the fridge until needed.

Step 2
For the filling: In a non-stick frying pan heat 4 tbsp oil on medium heat and cook onion, garlic and spices for 2-3΄ until tender and fragrant. Add meat, season with salt and pepper and cook for 6-7΄ stirring until beef changes color and all liquid evaporates. Remove pan from heat, stir in parsley, pine nuts and sultanas and set aside.

Step 3
For the bulgur: Whizz onion in a blender, add soaked bulgur, salt, pepper and pulse 3-4 times until smooth. Add ground beef and whizz until mashed.

Step 4
Preheat oven at 180οC/fan. Butter an oven proof dish 23×32 cm and spread with half bulgur. Straighten the surface using a spatula and spread the filling. Cover with the remaining bulgur. Brush surface with a little butter, sprinkle with a little salt and pepper and bake for 25΄, until nicely colored.

Step 5
Remove pie from the oven, cut in diamond shapes and bake for another 25΄. Let stand for 5΄ before serving with yogurt mix.
