Ideal for a Sunday or a festive dinner.
Serves: 6 Preparation time: 15m Baking time: 1.30h Ready in: 2.0h
½ pound sliced beef
4 large chopped onions
¾ cup olive oil
1 tsp. tablespoons cow butter
1 small glass of dry red wine
½ cup orange juice
1 tsp. vinegar
½ tsp. teaspoon cardamom powder
2 tsp. sweet sugar
1 cup raisins blonde
salt and pepper
Salt and pepper the meat, heat the oil with the butter in a wide saucepan and brown the slices of beef both sides, along with the carnations.
Add in the pot the onions and turn 2-3 times.
Add the orange juice, wine, cardamom, vinegar, sugar, salt, pepper and a little hot water, so much as it covers the meat. Reduce heat, cover the pot and let the meat simmer until tender. Along the way check whether it needs any more water.
Once the meat is tender, add the seeds of pomegranates with raisins and a little warm refreshing water. Allow the sauce to simmer for 20 minutes.
Remove the meat from the pot, pass the sauce from the food processor and serve the meat with the sauce. It goes nicely with boiled potatoes or with steamed white rice.
