Perfect for BBQ! Double recipe ingredients and enjoy juicy burgers with friends and a couple of good quality cold beers or wine!

Ingredients
500 gr minced beef
500 gr minced lamb
1 onion, grated
1 small tomato, grated
1 small tomato, diced
100 gr fresh cheese
1 egg beaten
75 gr panko (Japanese breadcrumbs)
½ can club soda
5 tbsp extra-virgin olive oil
salt, freshly ground black pepper

Method

Step 1
Put all the ingredients into a large mixing bowl, except for the cheese and diced tomato, and season with salt and pepper. Mix thoroughly, making sure the ingredients are well distributed. Keep in the fridge for 1 hour.

Step 2
Put cheese and diced tomato in a bowl and season with salt and pepper. Marinate for 1 hour.

Step 3
Divide meat mixture into 6 portions. Shape each portion into a burger patty (10-12cm diameter). With a spoon, scoop out approximately 2 tbsp meat from the middle of the patty – careful not to scoop all the way through to the bottom. Reserve the scooped meat. Put 2 tbsp filling in each “pocket” and cover with the reserved meat. Pinch the sides to close and smooth to flatten.

Step 4
Cook on a grill pan or grill for approximately 7 minutes on each side. Serve on its own with side dishes or in buns as burgers.
