A simple appetizer that matches a nice glass of cool white wine or a nice shot of cold rum!

Serves: 6-8 Prep. time: 15′ + 2 hours marinating + 1 day soaking Cooks in: 50′ Ready in: 1:5′

Ingredients
1500 g salted cod fish, soaked in water for 1 day, cut in small pieces
5 large red onions, sliced
1½ cup extra-virgin olive oil
6 garlic cloves
2 limes, juiced
2 cups breadcrumbs or panko
1/4 cup spearmint, finely chopped
1/4 cup dill, finely chopped
1 cup white rum
black pepper

Method
Step 1
Whizz 1 cup olive oil with garlic and lime juice until smooth. Put cod in a bowl and cover with marinade. Refrigerate for 2 hours.

Step 2
Preheat oven at 180οC/fan. Brush a medium non-stick pan with a little oil and cover bottom with onions slices. Place cod pieces on top and drizzle with remaining marinade.

Step 3
In a bowl mix breadcrumbs with spearmint, dill and pepper. Sprinkle fish with this mixture and drizzle with rum and remaining oil.

Step 4
Cover with baking parchment and bake for 30 minutes. Remove parchment and bake for another 20 minutes until a nice gold crust is formed.
