Less is more, so just marinate your chops in good quality oil and season with salt, pepper and oregano after grilling. It will make a big difference!

Serves: 6-8 Preparation time: 5′ + 1h marinating Cooks in: 40′ Ready in: 45′

2 kgr lamb chops (good quality meat)
3 tbsp dried oregano
1 cup extra-virgin olive oil
1 large lemon, juiced
salt, freshly ground black pepper


Step 1
In a large bowl massage meat with oil and let marinate in the fridge for 1 hour.

Step 2
Preheat grill at 220°C. Place a baking dish in the middle shelf and on top a wire rack where you have transferred your lamb chops. Cook for 20 minutes or so on both side, until nicely browned and crispy.

Step 3
Transfer on a serving platter, season well with salt, pepper and oregano, drizzle with lemon juice (if you wish) and serve hot with oven potatoes or French fries and a nice green salad.
