A savory-meets-sweet appetizer…
Serves: 6 Preparation time: 5m Baking time: 15m Ready in: 20m
sourdough bread, 1 loaf cut in slices, toasted
200 gr soft cheese Katiki Domokou* or other soft cheese
6 figs washed, dry
1/3 cup Samos sweet wine or other sweet wine
rosemary, 1 small sprig
Heat a non-sticking pan and add the figs. After releasing their juices, turn them over and cook until all juices evaporate.
Pour the wine and add the rosemary sprig. Reduce heat and simmer until figs are tender but not melted. Discard rosemary and remove from heat; cool to room temperature. Slice figs once cooled.
Top each toasted bread slice with cheese and arrange fig slices on top. Drizzle with any juices from the pan and serve immediately.

Katiki Domokou is a soft, creamy Greek cheese that tastes a bit sour. Use any soft cheese of your choice or crumbled goat cheese.
