Full of Mediterranean flavor, this is a wonderful seafood recipe that is surprisingly easy to make.

Serves: 4 Preparation time: 20′ Cooks in: 20′ Ready in: 40′

Ingredients
15gr red mullets medium sized
4 garlic cloves, finely chopped
1 cup breadcrumbs
1 cup extra-virgin olive oil
½ cup parsley, finely chopped
½ cup dry white wine
salt, freshly ground black pepper

Method
Step 1
Clean/gut fish very carefully.

Step 2
In a bowl mix breadcrumbs with garlic, parsley, half oil, season well with salt and pepper and stuff mullets.

Step 3
Take a large non-stick fry pan and place on a medium-high heat. Salt and pepper the skin of the red mullet. Add half oil to the pan and place the fish and remaining stuffing. Cook for approximately 4 minutes. Once you get a lovely crispy skin, flip fish and cook for another minute. Add wine and when alcohol evaporates, add a little water and simmer for 10-12 minutes.

Step 4
Transfer fish on a serving platter, sprinkle with parsley and serve warm with a Greek tomato-cucumber-pepper-onion salad (“horiatiki” salad) or a hearty green one.
