Ingredients
1 pizza crust
1 egg, beaten
1 tbsp extra-virgin olive oil
1 tbsp mix of black and white sesame seeds
100 g Greek Graviera* cheese, grated
100 g feta cheese, chopped

For the lamb
¼ cup extra-virgin olive oil
1 garlic clove, crushed
400 g boneless lamb leg, thinly sliced
1 tsp sweet paprika
1 tbsp oregano leaves, finely chopped
1 tbsp mustard
1 lemon, juiced
salt, pepper

For the sauce
4 sweet red peppers, roasted, peeled, chopped
2 garlic cloves, roasted, chopped
1 tbsp tomato paste
3 tbsp extra-virgin olive oil
1 tbsp oregano leaves, finely chopped

Method
Step 1
For the lamb: In a bowl stir all ingredients and marinate for 30 minutes. Heat a large non-stick frying pan and cook lamb for 10 minutes or until nicely colored and well done.

Step 2
For the sauce: In a bowl stir in all ingredients. Set aside.

Step 3
Preheat oven at 180οC/fan. Brush a shallow round baking pan (28 cm) with a little oil and spread pizza crust. Spread a little sauce, sprinkle with half Graviera cheese, feta cheese, lamb and sprinkle with remaining graviera cheese.

Step 4
Brush the edges with egg beaten with a little olive oil and sprinkle with sesame seeds. Bake for 25 minutes or until dough is cooked through.

* Graviera is one of the most popular cheeses in Greece. Similar to Gruyere and a little sweet, it’s a great table cheese and good for grating.
