Light and fluffy, these cupcakes are full of key lime flavor! And the lime frosting is so sweet and tangy!

Ingredients
175 g butter, in room temperature
175 g sugar
3 eggs
175 g flour
1 lime, juiced + zested
½ tsp baking powder

For the glaze
200 g white chocolate
100 butter, cold
200 g cream cheese
1 lime, juiced + zested
a few drops yellow food coloring

For garnishing
some colored sugar
1 lime, zested

Method
Step 1
Preheat oven at 190oC/fan. Line 12 muffin cases with 12 paper muffin cups.

Step 2
Beat butter and sugar in your stand mixer until white and fluffy. Add eggs one at a time, waiting to incorporate before adding the next one. Then add flour, baking powder, lime juice and zest, until you get a smooth batter.

Step 3
Divide mixture into the muffins up to 2/3. Bake for 18-20 minutes. Remove tin from the oven and let cupcakes cool for 5 minutes in the tin. Then remove from tin and cool on a wire rack.

Step 4
For the glaze: Melt white chocolate in a bain marie. Then stir in butter until melted and incorporated. In a bowl whizz cream cheese and when fluffy incorporate melted chocolate, lime juice and zest and a few drops food coloring.

Step 5
When glaze has set drizzle cupcakes and sprinkle with colored sugar.
