Mediterranean flavors in one simple homemade pizza! What a lovely recipe, ideal for parties or even better, for watching FIFA World Cup…

Serves: 8 Prep. time: 10′ + 1 hour waiting Cooks in: 25′ Ready in 1 hour and 35′

Ingredients
4 cups all-purpose flour, plus more for work surface
2 packets active dry yeast (1/4 ounce each)
2 tbsp sugar
1/4 cup extra-virgin olive oil, plus a little extra
2 tsp kosher salt

Topping
8 sundried tomatoes, preserved in oil, drained, chopped
5 heaped tbsp basil pesto ready made
300 g yellow mozzarella, coarsely grated

Method

Step 1
Preheat oven at 200οC/fan. Brush your baking dish with a little oil. Pour 1 1/2 cups warm water into a large bowl. Add yeast and let stand until foamy (5 minutes). Whisk sugar, oil, and salt into yeast mixture. Add flour and stir. When a sticky dough forms, transfer to an oiled bowl and brush top with oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until doubled in size, about 1 hour. Turn out onto a lightly floured work surface and gently knead 1 or 2 times before using.

Step 2
Line the base of the baking dish with dough. Brush the surface with basil pesto and sprinkle with mozzarella and sun dried tomatoes.

Step 3
Bake for 10 minutes, then turn down heat at 180οC and bake for 15 minutes or until cheese melts nicely. Serve immediately.
