Throw your pork and sun-dried tomatoes into a pot and simply simmer, for a no-fuss lunch or dinner.

Ingredients:
1 kg pork shoulder, in slices
10 sun-dried tomatoes, from a jar
200g graviera cheese, diced*
1 onion, finely chopped
1 cup dry red wine
1 sprig rosemary, leaves picked
4 tbsp extra-virgin olive oil
salt, freshly ground black pepper

The X Factor
Graviera cheese is one of the most popular Greek cheeses. It’s a hard cheese with a light yellow color, and it has a slightly sweet and nutty taste. It matches up pork perfectly!

Method

Step 1
In a non-stick pan heat 1 tbsp oil and sauté meat until any liquid is absorbed. Add remaining oil and stir in onion. Cook until meat is nicely colored.

Step 2
Stir in wine and, when alcohol is absorbed, reduce heat to minimum, season with salt and pepper, stir in sun-dried tomatoes, rosemary, cover pan with lid and simmer until meat is tender and sauce thickens.

Step 3
Remove pan from heat, add cheese, cover with lid. Serve warm with green salad.
