We’ve posted our fair share of pies, but this one is full of nutty and citrus flavor!

Ingredients
1 large orange, washed, dry
1 cup sugar
3 eggs
2½ cups blanched almonds
¼ cup all purpose flour
1 tsp baking powder
icing sugar for dusting

Method

Step 1
Using a wooden toothpick or wooden skewer prick orange to create many holes. Put in a medium pan with 1 lt water and boil for an hour until its peel is really tender. Drain keeping the liquid.

Step 2
Grind blanched almonds to powder (blender or multi). Preheat oven at 180C/fan.

Step 3
Using your stand mixer beat eggs and sugar until white and fluffy. Cut orange in halve and remove pit. Mash in your blender. Add orange puree in your mixer bowl, then flour, almond powder and baking powder until incorporated.

Step 3
Brush a 22 cm diameter-dish with butter and line base and sides with non-stick parchment. Transfer batter, straightened surface with a spatula and bake in the oven for 1 hour. Insert a knife or toothpick in the middle of the pie. It should come out clean.

Step 3
Cool for 10΄ and then turn on a serving platter. Remove parchment and when cool completely, dust with icing sugar and serve. If you wish, you can garnish the top with orange spoon sweet in slices, some whipped cream or serve with a scoop of vanilla or orange ice cream.
