Try these crunchy croquettes, a great way to use up leftover mashed potatoes, flatter any meal!
Serves: 4 Preparation time: 20′ Cooks in: 40′ Ready in: 60′
600gr potatoes, boiled, drained very well
2 spring onions, finely chopped
100gr kefalotyri cheese or any other hard yellow salty cheese
1 tbsp dry pennyroyal, finely chopped
½ bunch parsley, finely chopped
Kosher salt, freshly ground black pepper
flour for dusting
olive oil for frying
Place warm potatoes in a bowl and mash most of them with a fork. Stir in all ingredients and season with salt and pepper.
Form small-sized balls, dust them and fry in batches in hot oil for a couple of minutes until nicely colored. Drain on kitchen paper and serve warm.
