Summer’s favorite fruit, grapes, add flavor to this easy, homemade recipe. This spoon sweet is made with sultana grapes, a sweet variety of grapes. It can be served alone, with soft cheese or ideally as a natural yogurt topping.

Ingredients
2 kgr Sultana grape (Thompson seedless or  Lady de Coverly) ripe, firm, washed, all large and small stems removed
1 kgr sugar
1 ½ cup water
3-4 apple geranium leaves or 1 tsp vanilla extract
1½ cup almonds, powdered
½ lemon, juiced

Method
Step 1
Place half grapes in a large pan with heavy bottom and cover with half sugar. Place the rest of the grapes on top and cover with the remaining sugar. Leave aside for 4-5 hours.

Step 2
Place pan on high heat and boil for 5 minutes. Then reduce heat and simmer for 15 minutes skimming off foam with slotted spoon if necessary. Do not stir, only shake the pan from time to time.

Step 3
Turn up heat to high and boil for another 15-20 minutes. Remove pan from heat and leave to cool. The next day add apple geranium leaves or vanilla extract and boil until syrup thickens. A few minutes before removing pan from heat stir in almond powder and lemon juice. Leave uncovered and shake the pan a few times.

Step 4
Leave sweet spoon to cool and store in clean, sterilized vases.
