This is a traditional recipe from Chios island. They are simple omelets stuffed with juicy minced beef! They are full of protein, believe us!

Serves:Preparation time: 10′ Cooks in: 40′ Ready in: 50′

Ingredients
For the omelets:
6 eggs
2 tbsp milk
olive oil for frying
salt, freshly ground black pepper

For the filling:
400gr minced beef
2 tbsp extra-virgin olive oil
1 large onion, finely chopped
6-8 tbsp kafalograviera cheese, grated (or other semi-hard salty cheese)

For serving:
fresh lemon juice
salt, freshly ground black pepper

Method
Step 1
For the filling: Heat olive oil in a large heavy-based saucepan on medium heat. Sauté onion until translucent. Stir in minced beef and cook until meat is browned all over. Season well with salt and pepper, add a little water and simmer for 25 minutes or until cooked through. Stir in cheese.

Step 2
For the omelets: In a bowl beat eggs with milk, season with salt and pepper and fry in 3 batches in a non sticking frying pan with a little oil until cooked through.

Step 3
Stuff omelets with minced meat, roll them up, drizzle with a little lemon juice, sprinkle with a little extra cheese and serve warm.
