This traditional dish is made with beef (or in some cases with lamb or chicken). Now that summer is here we’ve decided to make it a with squid. It is absolutely juicy and delicious!

Serves: 6-8 Prep. time: 15′ Cooks in: 55′ Ready in: 1:10′

Ingredients
1 kg large squids, cleaned, chopped in large pieces
500 g orzo
1 large onion, grated
1 kg ripe tomatoes, grated
1 tbsp tomato paste
1 cup extra-virgin olive oil
salt, pepper

Method

Step 1
Preheat oven at 180oC/fan. In large pan heat oil and cook onion with squid for 5 minutes. Transfer on a large deep baking pan or Dutch oven.

Step 2
Dissolve tomato paste in a glass of water and transfer in the pan with grated tomatoes, another glass of hot water, season with salt and pepper and bake for 30 minutes.

Step 3
Stir orzo in the pan and bake for another 20 minutes until pasta absorbs all water, but is moist and tender. Let stand for 5 minutes and then serve immediately.
