Do you want a quick mezze for your wine or beer? This is the perfect recipe! Choose firm but ripe tomatoes for full flavor. Serve warm!
Serves: 8 Prep. time: 15′ Cooks in: 20′ Ready in: 35′
8 ripe medium tomatoes, firm
1/3 cup extra-virgin olive oil
3 tbsp sugar
400 g haloumi cheese, coarsely grated
1 cup fresh spearmint leaves, finely chopped
Preheat oven at 200C/fan. Cut tomatoes in thick slices, brush with oil and sprinkle with sugar and salt. Place in a small non stick baking dish lined with non stick baking parchment.
Bake for 10 minutes. Sprinkle with cheese and bake for another 10 minutes until cheese melts.
Serve tomatoes on a serving platter, drizzle with a little extra oil and sprinkle with chopped spearmint and season with a little pepper.
