Really fragrant and delicious, these potatoes are an ideal light dish or the perfect appetizer.

2 kg medium sized potatoes, in wedges
2 garlic cloves, crushed
1 large onion, grated
1 red pepper, diced
1/3 cup extra virgin olive oil
1/3 cup mustard
2 lemons, zested
150gr kefalograviera cheese or any other hard salty sheep milk cheese
1 glass beer
salt, freshly ground black pepper
Preheat oven to 180C.
Put all ingredients in an oven-proof dish and toss very well. Season well with salt and pepper and toss again.
Cover with foil and bake for 1,5 hour. Remove foil and bake for another 10 minutes, to brown evenly.
