What a smart way to persuade your children to eat beetroot. They won’t even notice! And sweet beetroot keeps this rich chocolate cake wonderfully moist…

Serves: 1 round baking dish 23-24 cm Prep. time: 30′ Cooks in: 60′ Ready in: 1:30′

250 g butter, at room temperature
330 g soft brown sugar
4 eggs
250 g flour
2 tsp baking powder
3 tbsp cocoa powder
450 g beetroots, grated
150 g chocolate, grated
1 tbsp vanilla extract
icing sugar

Step 1
Preheat oven at 180ºC/fan.

Step 2
In the bowl of your stand mixer whizz butter and sugar until white and fluffy. Add eggs, one by one, whizzing for 3 minutes. Add flour, baking powder, cocoa and whizz until well combined.

Step 3
Stop the mixer and stir in beetroot, chocolate and vanilla using a spatula. Transfer in your buttered baking dish and bake for 50-60 minutes or until a wooden skewer, when inserted, comes out clean. Cool on a wire rack and sprinkle with icing sugar if you wish.
