Simply irresistible, delicious and very juicy! You will love the combination of chicken with haloumi cheese and tomato! They keep it tender while on grill… The yogurt sauce on the side matches this dish perfectly, too.

Serves: 4 Prep. time: 15′ + 1-2 h marinating Cooks in: 20′ Ready in: 35′

Ingredients
4 chicken breasts, diced
2 green bell peppers, diced
300 g haloumi cheese, diced
24 cherry tomatoes
6 pitta breads or flat breads
12 large metallic skewers or wooden (soaked in water for 20 minutes)
salt, pepper

For the yogurt sauce:
250 g Greek strained yogurt
1 cup fresh spearmint leaves
1 garlic clove
5 tbsp extra-virgin olive oil
1 lemon, zested and juiced
salt, pepper

Method
Step 1
For the yogurt sauce: Whizz all ingredients in your blender until smooth. Refrigerate.

Step 2
Place chicken pieces in a bowl, season with salt and pepper and toss with 3 tbsp of yogurt sauce. Refrigerate for 1-2 hours and allow to marinate.

Step 3
Divide all ingredients in 12 and thread the chicken and veggies on the skewers alternating the ingredients. Grill for 20 minutes, turning occasionally, until cooked through. Serve with yogurt sauce and warm pitta breads.
