A chicken recipe with a bit of summer mood.

1 chicken in portions
¼ kilo vine leaves, blanched and chopped
3-4 spring onions, chopped or 1 large onion, chopped
½ cup of olive oil
¾ – 1 cup of lemon juice (depending on how sour you prefer)
3 tablespoon of cornflour
salt, freshly ground pepper
Heat the olive oil in a saucepan and sauté the portions of chicken until they get browned on all sides.
Add the spring onions and continue sautéing until softened. Add the vine leaves, sauté all ingredients for a few minutes and add half of the lemon juice.
Pour a cup of hot water, add salt and pepper and simmer with the lid of the saucepan on for about 50 minutes. During cooking check if some warm water is needed.
Dissolve the cornflour in the lemon juice and pour into the pan. Then, shake gently the saucepan and simmer for about 5-6 minutes more. Serve with fries.
