They used to call it “poor man’s food” because it was cheap to buy. Our grannies were able to feed and satisfy a big family with a little codfish and only few kilos of potato… Its value and its wonderful taste are not to be questioned! In this recipe we keep it simple and beautiful. Add as much lemon as you want!

Serves: 5-6 Prep. time: 20′ Cooks in: 45′ Ready in: 1:05′

Ingredients
6 cod fish fillets
1 kg potatoes
10 garlic cloves
150 ml extra-virgin olive oil
2 large lemons, juiced
2 tbsp parsley, finely chopped
coarse salt, black pepper

Method
Step 1
Peel potatoes and chop in chunks same size of the same size. Slice garlic.

Step 2
Place a large pot with heavy bottom on high heat and put in potatoes, garlic and fish on top. Sprinkle with salt and pepper and drizzle with oil and lemon juice.

Step 3
Add 250 ml water and when it comes to a boil simmer on low heat for 40 minutes or so, until all ingredients cook and sauce thickens.

Step 4
Before removing pot from heat, add some extra lemon juice, sprinkle with pepper and parsley. Serve immediately drizzling with some extra olive oil, pepper or even more lemon juice.
