Serve these sweet treats with a nice cup of coffee, tea or sweet wine.

36 large dates
200gr anthotyro cheese, ricotta or any other fresh white cheese
3 tbsp honey
1 tsp cinnamon powder
150gr almonds, blanched, slivered, toasted, lightly crushed
Open dates with a knife like a book and remove pit. Do not cut all the way. In a bowl, mix cheese, honey and cinnamon until smooth. In another bowl put crushed almonds.
Stuff each date with a teaspoon of filling and close, leaving 20% open. Dip the dates on the almond, pressing down the side of the opening to stick on the cheese.
Transfer on a plate and refrigerate until needed.
