A simple but delicious meal, inexpensive, healthy and perfect for the whole family to enjoy.

1 free range chicken, cut in 8 portions
3 tbsp extra virgin olive oil
1 onion, finely chopped
½ green pepper, diced
½ red pepper, diced
½ cup tomato passata
4 cups chicken stock
½ tsp chicken seasoning blend
2 cups rice, boiled
1 cup peas, boiled
1 cup baby carrots, boiled
salt, freshly ground black pepper
Heat some oil in a pan and brown chicken well, then remove and set aside.
Add onion and peppers in the same pan and cook for a few minutes until softened. Stir in tomato passata, chicken stock, chicken seasoning blend, salt and pepper and chicken pieces, simmering for 1 hour or until chicken cooks through and sauce thickens a little.
Stir in rice and veggies and serve immediately.
