We can’t help smiling when we go to the grocery store and see the symbol of the season, the gorgeous orange pumpkin, waiting to be carved or to become a juicy cake… You heard right! A simply delicious, brimming with pumpkin and spices flavor cake…

Ingredients
2 eggs
½ cup sugar
2 tbsp honey
¾ cup extra-virgin olive oil
1 cup sautéed pumpkin flesh, pureed
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/5 tsp ground cloves
1 tsp ground ginger
200gr all-purpose flour
½ cup walnuts, finely chopped
½ cup sultanas
pumpkin seeds for sprinkling

Method

Step 1
Preheat oven to 170C and brush a medium, long cake tin with oil. In a bowl sift flour and baking powder and mix with soda and all spices.

Step 2
In a large bowl beat eggs with sugar for 2-3 minutes. Add honey, then olive oil and lastly pumpkin puree until well combined.

Step 3
With a spatula fold in flour mix in batches. Then, fold in walnuts and sultanas.

Step 4
Pour mixture in the tin, sprinkle with pumpkin seeds and bake for 40 minutes or until a skewer inserted in the centre of the cake comes out clean. Leave to cool in the tin for 10 minutes then turn on a wire rack.
