What a nutritious combination! Try it with any kind of large fish you want.

Serves: 4-5 Prep. time: 20′ Cooks in: 60′ Ready in: 1:20′

1 kg okra
½ cup vinegar
1-1¼ kg dusky grouper, gutted, scaled
2/3 cup olive oil
1 large onion, finely chopped
2 garlic cloves, quartered
400 g ripe tomatoes, peeled, chopped
salt, pepper

Step 1
Remove the upper rims of the okras and a small part of their stems. Rinse, drain, transfer in a bowl and marinate in the vinegar for 30 minutes.

Step 2
Season fish well inside and out with salt and pepper. Transfer in an ovenproof baking dish.

Step 3
In a pan heat oil and cook onion for 1 min. on medium heat. Stir in garlic and cook for 1 min until fragrant. Stir in tomato, season with salt and pepper. When it comes to a boil add okras and simmer until a little tender.

Step 4
Pour okra over fish and bake for 30-40 min. Serve warm with crusty bread.
