We can’t help smiling when we buy the symbol of the season, the gorgeous orange pumpkin, in order to make a juicy cake… Try it! It is so easy, really fluffy and very sweet!

280 g orange pumpkin, grated
240 g sugar
2 eggs + 1 egg yolk
100 g butter
125 ml vegetable oil
280 g all purpose flour
10 g baking powder
4 g baking soda, powder
1 g cinnamon, powder
2 g salt
Preheat oven at 175οC/fan. Butter a round springform cake pan and sprinkle with flour.
In a bowl mix pumpkin with oil, butter, cinnamon, salt and sugar using an egg beater. Add remaining ingredients and combine well.
Transfer mix in the pan and bake for 40 minutes or until a knife comes out clean when inserted in the cake.
