A light salad, perfect for your office or a quick night meal. Try it with graviera cheese (PDO) one of the most popular cheeses in Greece. It’s a hard cheese with light yellow color and a slightly sweet and nutty taste.

1 bunch rocket, washed, dried, chopped
2 chicory, chopped
1 red curly lettuce, washed, dried, chopped
4-5 lettuce leaves, washed, dried
3 spring onions, finely chopped
1 cup dill, finely chopped
150gr graviera cheese, coarsely grated
20 cherry tomatoes, roasted, cut in half
3 tbsp butter
1 tbsp sugar
salt, freshly ground black pepper

For the dressing:
1/4 cup extra-virgin olive oil
3 tbsp red wine vinegar
1 tbsp runny honey
2 tbsp soya sauce

Step 1
For the cherry tomatoes: Blanch tomatoes in boiling water for 1 minute. Let cool and peel the skin off. Melt butter in large skillet over medium heat. Add cherry tomatoes, sugar, salt and pepper; sauté for about 5 minutes tossing occasionally. Keep warm.

Step 2
Toss all salad ingredients in a large serving bowl or platter.

Step 3
Whizz all dressing ingredients.

Step 4
Toss your salad with the dressing, place cherry tomatoes and cheese on top and serve immediately with crunchy bread.
