It’s a soup to… kale for! Kale has became a fixture in the kitchens of northern Europe and in Portugal they love cooking it in broth and with sausage. It tastes really really good…

Serves: 5 Prep. time: 30′ Cooks in: 1h Ready in: 1:30′

2 onions, finely chopped
4 garlic cloves, crushed
60 ml extra-virgin olive oil
1 spicy sausage (e.g. chorizo or pork), chopped
6 large potatoes, in chunks
1 large bunch kale
1½ lt vegetable stock
2 bay leaves
smoked paprika
salt, black pepper


Step 1
In a large pan heat oil and cook onion and garlic on medium heat until fragrant. Add sausage and potatoes and cook for 2-3 min. stirring constantly.

Step 2
Add stock, bay leaves and cook until tender. Discard bay leaves and using a stick blender whizz until you get a smooth soup.

Step 3
Add kale and simmer on low heat until greens are tender. In a bowl mix paprika with oil and make a dressing.

Step 4
Serve soup in bowls drizzling with a little dressing.
