Try this light pasta salad that uses the season’s delicious veggies and fruits! It is perfect for summer cookouts and easy family dinners!
Serves: 6 Preparation time: 15′ Cooks in: 30′ Ready in: 45′
400gr cheese ravioli or penne
1 large bunch rocket, washed, dried
16 cherry tomatoes, halved
4 tbsp toasted pine nuts
2 small melons, diced or in balls
4 slices ham
salt, freshly ground black pepper
For the dressing
4 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
4 tbsp fresh basil leaves, finely chopped
Prepare pasta following pack instructions. Strain and toss with olive oil. Let cool.
For the dressing: Toss all ingredients in a bowl.
In a large serving bowl or platter toss rocket with cherry tomatoes, pour over with dressing, add cheese ravioli, melon, ham and pine nuts and toss well. Serve immediately.
