The ingredients are simple and few but it takes some time to steep. Serve directly from the freezer!
Serves: 1 bottle Preparation time: 30′ + 6 days resting Cooks in: 2′ Ready in: 32′
8 thick-skinned lemons, unwaxed
750ml 100-proof vodka *
For the syrup:
Wash the lemons thoroughly with hot water to remove any reside of dirt or pesticides and pat dry. Carefully zest the lemons with a vegetable peeler. Leave no white pith on the peel. Whizz peel with sugar. Transfer in a bottle or large jar with lid.
Pour vodka in the bottle or large jar, seal tightly and store in a dry, dark place for 6 days.
After the rest period prepare the syrup: Boil water and sugar for 2 minutes until it dissolves. Leave to cool.
Strain vodka in a bowl, add the syrup, mix well and bottle Limoncello. Keep in the freezer until ready to serve.
