Do you want a yummy, aromatic dish to make your guests think you are a master in the kitchen? Well, this is it! The combination of chicken, jasmine rice and fragrant tea really really works. Don’t forget to sprinkle with dried apricots and sour cherries for sweetness!

Ingredients
1 chicken (1½ kg)
4 teabags jasmine tea
1 cup jasmine rice
½ cup wild rice
½ lemon + 1 lemon, juiced
2 tbsp extra-virgin olive oil
2 tbsp butter
salt, pepper

For garnishing
1 cup dried apricots
1 cup sour cherries, canned
pistachios

Method
Step 1
Prepare the jasmine tea in a large bowl with 1 lt hot water or according to packet instructions. Discard teabags and soak wild rice for 40 minutes. Drain rice and reserve tea liquid.

Step 2
In the meantime preheat oven at 180οC/fan, wash chicken and pat dry. Rub with halved lemon inside out, then with oil and season well with salt and pepper. Transfer in a roaster, cover with lid and bake for 40 minutes.

Step 3
Mix wild rice and jasmine rice and transfer in the roaster along with lemon juice, oil and butter.
Stir in reserved jasmine tea after reheating it. Season with salt and pepper and bake for another 20 minutes or until rice is cooked and all liquid in the roaster has been absorbed by the rice.

Step 4
Serve in plates sprinkling with chopped dried apricots, chopped sour cherries and pistachios if you wish.
