Try this souvlaki and you will be amazed by the taste of this alternative combination of large beans, pepper and juicy pancetta!

Serves: 5-6 Prep. time: 15′ Cooks in: 60′ Ready in: 1:15′

Ingredients
350 g large lima beans (large butter beans), soaked in water overnight
1 red pepper, diced (2 cm)
1 green pepper, diced (2 cm)
1 yellow pepper, diced (2 cm)
180 g pancetta, diced (2 cm)
1 egg beaten with 1 tbsp water
1-1½ cup panko breadcrumbs
sweet or hot paprika
oil for frying
wooden skewers, soaked in water for 20′
salt, pepper

Method
Step 1
Boil beans for 45-50 min. until soft. Drain and allow to cool. Season with salt, pepper and paprika.

Step 2
Thread beans, pancetta and peppers pieces into skewers, alternating the three ingredients. Brush with egg and dust with breadcrumbs.

Step 3
Heat oil in a large frying pan and fry in batches on all sides until nicely colored. Serve warm with lemon wedges.
