Warm or cool, with any kind of smoked ham you prefer, this salad is heaven!

Ingredients
150 g brown lentils
1 bay leaf
1 cup rocket
1 red onion, thinly sliced
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
150 g smoked ham, diced, sautéed
2 pinched fresh oregano or fresh thyme leaves
2 boiled eggs, halved
salt, pepper

For the dressing
2 tbsp mustard
2 tbsp red wine vinegar
7 tbsp extra-virgin olive oil

Method
Step 1
In a medium pot boil lentils with bay leaf in plenty of water, seasoning with salt the last 5 mins. Boil until just tender. Drain well and allow to cool.

Step 2
Dressing: Mix well all ingredients and season with salt and pepper.

Step 3
In a serving bowl toss lentils with onion, peppers, ham and oregano leaves. Season with salt and pepper according to your taste. Drizzle with dressing, toss and set aside for 5.

Step 4
Top with rocket and eggs and serve.
