Pancetta lovers gather round and try out this perfect sweet and flavorful dish. You will love it!

Serves: 5-6 Preparation time: 10′ Cooks in: 50′ Ready in: 60′

700g pancetta, one piece, washed, pat dried
extra-virgin olive oil
salt, freshly ground black pepper

For the glaze
6 tbsp molasses
70ml brandy
2 tbsp spicy mustard
1 lemon, zested
2 lemons, juiced
¼ tsp cayenne pepper


Step 1
For the glaze: Whisk all ingredients in a small bowl.

Step 2
Preheat the oven at 220C/fan. Line a large tin with baking parchment. Brush pancetta piece with olive oil and season well with salt and pepper. Bake for 30-35 minutes until lightly browned.

Step 3
Brush pancetta with glaze and bake for another 10-12 minutes, repeating once or twice in the meantime, until dark browned, glazed and glossy. Let cool for 5 minutes and serve warm with green salad or French fries.
