These delicate and airy fish croquettes have an amazing light crisp coating and a beautiful, garlicky flavor! Try them today…

Serves: 4 Prep. time: 20′ Cooks in: 20′ Ready in:40′

Ingredients
800 g white fish fillet of your choice (cod, sole etc)
3 bread slices, soaked in water
extra-virgin olive oil
1 red onion, finely chopped
4 garlic cloves, finely chopped
½ cup dill, finely chopped
1 tsp sweet paprika
dry breadcrumbs if needed
salt, pepper

For dusting
flour
dry breadcrumbs or panko
2 eggs beaten
oil for frying

Method
Step 1
In a pot boil water. Turn down heat and put fish in. Leave for 15 mins.
Drain fish and chop in your multi or blender with onion, garlic and a
little olive oil until fish is flaky, not mashed.

Step 2
Mix fish flakes with the rest of the ingredients in a bowl and season
with salt and pepper. If mixture is loose, stir in dry breadcrumbs.
Refrigerate for 30 mins. Knead balls of walnut size.

Step 3
Heat plenty of oil and when hot fry fish balls in batches until golden.
Drain on kitchen paper and serve warm with fries or green salad of your
choice.
