Serves: 4-5 Prep. time: 30′ Cooks in: 20′ Ready in: 50′
1 medium rabbit (1-1½ kg), cut into 6 pieces
1½-2 cups dry white wine
olive oil (for frying)
1 cup all-purpose flour
½ cup red wine vinegar
Place rabbit in a shallow medium pot, drizzle with wine and marinate in the fridge for 30 minutes. Drain rabbit and pat dry with kitchen paper; discard liquid.
Season rabbit with salt and pepper and dust with flour. Heat oil in a large frying pan and fry rabbit on all sides until nicely colored. Pour in vinegar and cook for a couple of minutes until absorbed. Serve warm with potatoes or rice.
