Make your own homemade, traditional Greek pork gyros and wrap it up in a pita bread, garnished with a nice, cooling tzatziki sauce, tomato and onion slices if you like! Best meal ever!

Serves 4 Preparation: 15′ + 5h waiting Cooks in: 1h Ready in: 1:15′

Ingredients
1 kg pork pancetta

For the marinade
1/4 cup extra-virgin olive oil
1 tsp sweet smoked paprika
1 tsp dried oregano
1 tsp dried thyme
1 tsp ground allspice
2 lemons, juiced
2 garlic cloves, crushed
1 onion, finely sliced
baking parchment
salt, freshly ground black pepper

For serving
red onions and tomatoes, sliced
French fries
parsley, finely chopped
tzatziki sauce or Greek yogurt
warmed pita breads

Method

Step 1
In a bowl mix well all ingredients for the marinade. Put in pancetta and cover it well with marinade. Leave bowl in the refrigerator for 4-5 hours.

Step 2
Preheat the oven at 200C. Put the pancetta in baking parchment (3-4 large pieces) with the marinade, seal well and place on baking dish. Bake for an hour or so.

Step 3
Open the parchment, let pancetta cool for 3 minutes and cut in small pieces. Serve immediately with French fries, tomato slices, tzatziki sauce, sliced onion and parsley or wrap up all these ingredients in warmed pittas.
