Ingredients
700 g chicken thighs, boneless, in bites
150 g feta cheese, crumbled
1 lemon, zest and juice
1 large onion, grated
2 garlic cloves, finely chopped
1/3 cup extra-virgin olive oil
250 ml blonde ale + 2 tbsp extra
salt, pepper

For the bulgur
1 cup bulgur
2 cups water
2 tbsp butter
2 spring onions, finely chopped
1 bunch dill, finely chopped
½ red bell pepper, finely chopped
½ green bell pepper, finely chopped
salt, pepper

Method
Step 1
In a large pan heat oil on high heat and cook chicken until nicely colored on all sides. Add onion and garlic and cook until fragrant. Add blonde ale and when it comes to a boil, season with salt and pepper, cover with lid and simmer on low heat for 15 min. until sauce thickens. Stir in lemon zest and juice, stir in feta cheese and remove pan from heat.

Step 2
For the bulgur: In a small frying pan melt butter and cook spring onions for 1 min. Stir in bulgur until shiny. Season with salt and pepper, add hot water allowing it to evaporate. Add peppers, dill and stir. Remove pan from heat.

Step 3
Divide bulgur on plates and serve with chicken.
