Serves: 4 Preparation time: 30′ Cooks in: 60′ Ready in: 1:30′

Ingredients
3 medium potatoes, peeled, in cubes
3 leeks, chopped
3 carrots, chopped
½ broccoli, into florets
2 onions, chopped
2 cups squash, peeled, in cubes
2 medium ripe tomatoes, sliced
2 red peppers, sliced
2 green peppers, sliced
2 red apples, peel on, no core, in cubes
300 gr feta cheese, in cubes
½ bunch parsley, finely chopped
½ cup rusks, crushed
1 tsp sugar
100ml extra-virgin olive oil
1 cup vegetable stock
1 tsp thyme
1 tsp sweet paprika
salt, freshly ground black pepper

Method
Step 1
Set oven to 200C. In a bowl mix feta cheese with parsley. In another bowl mix rusks with sugar.

Step 2
Place all vegetables and apples in a roasting tin. Season with salt and pepper and toss. Add feta mixture, thyme, olive oil and toss well. Pour in the vegetable stock and sprinkle with rusk mixture and paprika.

Step 3
Bake for 30 minutes. Then reduce heat to 180C and bake for an additional half hour. Serve autumn-vegetable casserole warm.
