This classic pork casserole has been given a fruity twist thanks to the crunchy cherries, which bring out the best flavor in the tender pork bites!

Ingredients
2 kg pork, in small chunks (3cm)
750ml red wine
3 onions, finely chopped
1 tsp ginger, grated
2 bay leaves
1 tbsp extra-virgin olive oil
100gr bacon, chopped
200gr cherries, pitted
200gr strained yogurt
salt, freshly ground white pepper

Method

Step 1
Marinate pork chunks in a bowl with wine, salt, pepper, onion, bay leaves and ginger for 2 hours. Pat dry pork with kitchen paper and reserve marinade liquid.

Step 2
In a large heavy pan heat olive oil and sauté bacon and then pork chunks. Reduce heat to medium-low, add two cups of the marinade liquid and simmer for 1 hour or until meat is tender.

Step 3
Stir in cherries and simmer for 10 minutes or so. Remove pan from heat, stir in yogurt and serve immediately.
