Dry, tasteless turkey be gone! We will show you how to make a really moist, delicious fruity turkey roll even if it isn’t Christmas!

Serves: 4-6 Preparation time: 20′ Cooks in: 40′ Ready in: 60′

Ingredients
1 boneless skinless turkey breast (1 kgr),
30 sultana grape berries, washed, dry
6 fresh figs, peeled
3 peaches, peeled, cored
extra-virgin olive oil
pink pepper peppercorns, crushed
salt, freshly ground black pepper

Method
Step 1
Whizz two figs with one peach, a little salt and 1 tbsp oil. Mix pink crushed peppercorns.

Step 2
Preheat oven at 200oC. Trim any bits of fat or membrane from the turkey. Using a sharp knife, open out the turkey breast as if you are butterflying it. Place the turkey between two sheets of cling film and flatten it out a little with a rolling pin. Spread a generous dollop of the fruit puree onto the turkey breast and place some grapes on top. Roll it up like a Swiss roll. Secure with cook’s string at regular intervals along the length of the roll.

Step 3
Place the roll in an oiled oven proof dish and brush it with the rest of the fruit puree. Arrange the rest of the fruit next to the roll. Drizzle with olive oil and bake for 30-40 minutes.

Step 4
Leave it to cool for a few minutes before carving.
