500 g frozen mussels without shells, defrosted
2 garlic cloves
1/5 cup extra-virgin olive oil
1 red pepper, diced
1 cup dry white wine
3 tbsp mild mustard
1 cup parsley, finely chopped
1 cup feta cheese, crumbled
In a pan heat oil and cook garlic and pepper on medium heat, until softened, stirring occasionally. Stir in wine and mussels and toss for 2 minutes. Stir in mustard until sauce thickens, for a couple of minutes.
Remove pan from heat, stir in feta cheese and parsley and serve with crusty bread.
