Do you want your kids to eat carrot (or pumpkin)? Boil it, whizz it until smooth and hide it in their omelet! They won’t even notice!

4 eggs, beaten
1 large carrot
50 g ham, chopped
1 small tomato, chopped
2 tbsp Parmesan
extra-virgin olive oil
Boil carrot and whizz in a blender until you get a smooth puree.
In a bowl beat eggs with carrot puree, ham, tomato and Parmesan and sprinkle with a little pepper.
In a non-stick frying pan heat a little oil on medium heat and cook omelet for 2 minutes, covering with lid, until set and nicely colored. Then flip carefully and cook for another minute or more. Serve warm with crusty bread.
