This hearty dish is very simple and quick, full of aromas! It cooks so evenly and it is big enough to fit dinner for 4.

Ingredients
50 ml extra-virgin olive oil
1 large red onion, finely chopped
2 spring onions, finely chopped
2 roasting pimentos, diced
1 large potato, diced
1 large carrot, sliced
400 g peas, fresh or frozen
1 small bunch dill, finely chopped
1 tbsp tomato paste
1 tsp sweet paprika
300 ml vegetable stock or water
salt, pepper

Method

Step 1
In a large pot heat half oil and cook all vegetables for 2-3 mins, stirring often with a wooden spoon.

Step 2
Add stock, remaining oil, tomato paste, dill and season with salt, pepper and paprika. Turn heat down to low and simmer for 40 mins until all water has evaporated and veggies are tender. Serve warm with feta cheese if you like and crusty bread.
