Whip this recipe up with one hand tied behind your back! A lighter-ish everyday meal for the whole family. For a more hearty meal serve with crusty bread.

Serves: 4 Preparation time: 15′ + 12 hours soaking Cooks in: 1:30′ Ready in: 1:45′

400g cannellini beans, soaked overnight
1 large onion, finely chopped
2 garlic cloves, finely chopped
900g various seafood (shrimps, mussels, squids etc)
1 large ripe tomato, peeled, diced
50ml extra-virgin olive oil
5-6 cilantro seeds, crushed
1 bay leaf
salt, freshly ground black pepper

Step 1
Boil cannellini beans until tender and drain, keeping the liquid.

Step 2
In a large pot heat oil and sauté onion, garlic and bay leaf until fragrant. Add chopped tomatoes and cook for 2-3 minutes.

Step 3
Add 400ml of reserved liquid and when it boils, lower heat and stir in seafood and beans. Season with salt and pepper.

Step 4
Simmer for 15 minutes stirring occasionally. Before serving sprinkle with crushed cilantro seeds.
