1 kg good quality honey
1 kg sesame seeds, toasted nicely
½ cup sugar
rose water (optional)


Step 1
Whizz ¼ of the toasted sesame seeds in a food processor and mix in a bowl with the rest.

Step 2
In a deep frying pan with heavy bottom add honey and sugar. Stir continuously for 5 minutes over medium heat, until ingredients combine well and mixture is semi-hard. Pour a few drops of the mixture in a glass of water. If they don’t dissolve, the mixture is ready. Remove pan from heat and stir in sesame seeds.

Step 3
Empty onto a baking pan wet with a splash of water or rose water. Flatten with the back of a wet spatula to avoid sticking – 1 cm thickness is fine. When half cooled, cut into bars or desired shapes.
