These pies are heavenly! The Kasseri cheese balances the intense aromas of the cured beef and the tomato makes it more sweet to taste!

Serves: 12-15 pieces Prep. time: 20′ Cooks in: 30′ Ready in: 50′

1 package puff pastry
250 g pastirma, in thin slices
3 medium tomatoes, in thin slices
400 g Greek Kasseri cheese or other sweet yellow melting cheese, coarsely grated

For serving:
1 egg beaten with a little water
black sesame

Step 1
Soak pastrirma in a little cold water for 5΄. Pat dry on kitchen paper and cut in pieces.

Step 2
Preheat oven at 180οC/fan. Cut puff pastry in square pieces 6 cm long. Put one slice pastirma and tomato, season lightly and sprinkle with cheese. Brush the edges with a little water and place a second square of pastry on top. Seal the edges pressing down with a fork.

Step 3
Transfer on a baking dish lined with baking parchment, brush with egg, sprinkle with sesame and bake for 30 minutes or until nicely colored. Serve warm.
