Did someone say phyllo wrapped feta cheese? Holy moly, we’re in! The thing is are YOU? Are you ready to taste this -salty on the inside, sweet and crunchy on the outside- appetizer that will surpass all of your wildest dreams?

Serves: 2 Preparation: 15′ Cooks in: 15′ Ready in: 40′

Ingredients
300gr feta cheese, cut in 2 square pieces
2 sheets phyllo dough
extra-virgin olive oil or butter for brushing the phyllo sheets

For the red wine sauce:
1½ cup good quality dry red wine
5 dried figs, finely chopped
2 tbsp sour cheery jam
1 piece star anise
2 tbsp balsamic vinegar
1 lemon, zested
1 orange, zested

Method

Step 1
Preheat oven at 180C/fan. Lightly brush both phyllo sheets with olive oil or melted butter. Place one piece of sliced feta at the bottom edge of each phyllo sheet. Fold in each side, covering the cheese. Fold up starting with the cheese side until it is completely wrapped. Brush each side with a bit more olive oil or butter. Bake for 25 minutes until nicely colored. Alternatively, fry for 3-5 minutes on each side or until golden brown on both sides. Drain on kitchen paper.

Step 2
In the meantime, heat a large frying pan with heavy bottom and add all sauce ingredients. Simmer for 20 minutes or so until sauce thickens and becomes syrupy.

Step 3
Place on serving plate, drizzle with sauce and sprinkle with toasted chopped pistachios if you wish.

TASTY TIP
Replace red sauce with runny honey!!! It’s pure heaven…
