A filling, delicious soup that makes the perfect lunch and is full of Mediterranean flavors…
½ cup extra-virgin olive oil
5-6 bacon slices, finely chopped
1 red onion, finely chopped
200 g brown mushrooms, finely sliced
1 green bell pepper, finely chopped
1 cup dry white wine
400 g chopped tomato, whizzed
2 tsp sugar
2 garlic cloves, finely chopped
200 g short cut pasta (quadrettini)
1 tbsp dried basil
100 g Parmesan, finely grated
3 lt hot water
In a large pot heat oil and cook bacon, onion, mushrooms and peppers until fragrant and golden.
Stir in wine and when alcohol evaporates add tomatoes, sugar and garlic. Season with salt and pepper.
Add hot water and when it comes to a boil stir in pasta and basil. Low don heat and simmer for 20 minutes until pasta is ready.
Stir in Parmesan and serve immediately.
